The excellence of Cabernet Sauvignon has made its popularity all over the world. The success of this
grape is it's flavor, structure, complexity and longevity. The acidity and tannins help this wine
keep its structure and longevity. Cabernet Sauvignon can be blended with most other red wine
grapes and be successful. Originating from France's Bordeaux region the "Bordeaux Blend"
(Cabernet Sauvignon, Merlot, Cabernet Franc) is the most popular. In Australia, Cabernet Sauvignon
is being blended with Shiraz. In Italy, it is being blended with Sangiovese (most planted grape in Tuscany).
In Spain, they are blending Cabernet Sauvignon with their most planted grape, Tempranillo.

Depending on the age of the Cabernet Sauvignon, will depend on which type of foods it will pair with.
A young wine will need to be served with big flavored dishes to hold up to its bright fruit flavors, while an
older Cabernet Sauvignon, the flavors are a little softer so the food doesn't need to be as "big".
