      “The EOS Estate Winery is named after ‘Eos,’ the name given to the ‘Goddess of the Dawn’ 

in Greek Mythology.  Eos was the inspiration for harvesting our Estate wine grapes before, or right after the sunrise, 

to keep the fruit cool and help retain fresh varietal character.  The classical Greek mythology theme of the winery echoes 

not only a commitment to traditional winemaking techniques, but helps keep the focus on artistic quality instead of formula winemaking.” 

 

EOS, Goddess of the Dawn

 

        “In Greek mythology, Eos, the goddess of dawn, was sister to Helios (sun) and Selene (moon). 

She was the mother to the four winds: Boreas, Eurus, Zephyrus and Notus, and also of Heosphurus and the Stars. 

She was believed to open the gates of heaven every morning to the chariot of the Sun. Eos earned the wrath of Aphrodite by having a dalliance with Ares. One of Eos' lovers was Orion, which is why the constellation appears on the EOS Estate label today.”

 

 

 

Leslie Melendez, Senior Winemaker

 

        Leslie is a graduate of Cal Poly in San Luis Obispo , she started her wine industry career by joining the EOS winemaking team in 1993, 

and has played a part in developing the signature fruit-forward wine style the brand is famous for.  Leslie started as a Harvest Laboratory Technician at EOS.  

Daily, she was surrounded by the winemaking process, and with her hard work and dedication she became Senior Winemaker in 2004.  

Leslie’s true passion for winemaking motivates her to create the best hand-crafted wines that Paso Robles terroir can offer.  

Outside of the vineyards and the cellar, you can often find her at the local lakes and beaches.  

 

The Winemaking Philosophy

 

        Leslie’s ultimate goal is to make wines that are food friendly and well balanced.  Wines as rich in texture as they are in fruit.  

Leslie believes that structure is the most significant component of wine.  Her classic style of winemaking stays with the 

“philosophy of making refined, reserved wines, not heavy, overbearing wines that struggle rather than compliment food.”

We select wines that are great alone or with food.  The EOS Estate Wines fit our standards.  They are delicious!

EOS Estate Chardonnay

This dawn-harvested wine opens with intense aromas of nectarine, tropical fruit and toast oak, 

leading to flavors of tangerine, green apple, kiwi, and coconut.   Alcohol Content 14.5%

EOS Estate Zinfandel

Flavors of raspberry jam, bing cherries and spice lead to a long, 

lasting, silky finish with lingering flavors of chocolate.   Alcohol Content 14.5%  

EOS Estate Cabernet Sauvignon

The nose of this Cabernet Sauvignon is chock-full of briary blackberries and jam underscored by 

subtle hints of oak. Loads of dark berries explode on the palate enhanced by rich flavors of tar, coffee, tobacco, 

and molasses. The dry finish lingers with the essence of tobacco and smoke.   Alcohol Content 14.3%

EOS Estate “Tears of Dew” Late Harvest Muscat

This vintage opens with an explosion of aromas, including apricot, peach, apple and lilac. Flavors of 

peach and apricot coat the whole palate, while orange blossom essences add a delicate complexity. 

The rich flavors finish clean and not cloying, with a light, pleasant crispness.  Alcohol Content 11.5
