If you haven't heard of Dawn Olson and her chocolate truffles, let me be the
first to tell you that you are missing out on a treat. Using the best ingredients,
she has been molding French Bittersweet truffles since November 2003. I had the
opportunity to sit with her while she was preparing her chocolate delicacies.
Rich, smooth, creamy, and delicious is how she describes her signature truffles,
and I would have to agree, they are unique with her personal touch. As a wine companion,
I enjoyed them with various grapes, and found wonderful matches. In addition to her
signature truffles, she creates other flavors, such as: mint, caramel, coffee, raspberry and
Valencia orange flavored truffles. And by the way, the Valencia orange truffles paired
well with a French Sparkling Wine named
Sieur D'Argues Cremant de 'Limoux, mmm!
